Gluten free creamy sausage and pepper pasta

Turkey sausages are a great, low fat alternative to pork, with just as much flavour. Turkey is a good source vitamins and minerals that can help support brain, blood, bone, and heart health, immunity, muscles, and thyroid function.

Serves 4

Cook time: 32 minutes | Prep time: 15 minutes | Total: 47minutes

What you’ll need

250g halved plum tomatoes

1 chopped orange bell pepper

1 diced small red onion

1 tbsp garlic powder

1/2 tsp coarse black pepper

Pinch of salt

1 tsp basil

1 tsp smoked paprika

80g cubed cheese (I used vegan violife)

400ml hot water

100ml milk (I used oat)

8 chopped turkey sausages

240g gluten free dried penne pasta

Optional: Parsley to garnish

Method

  1. Start by oiling a hot pot with avocado oil, and when heated throw in your tomatoes, onion, and pepper. Fry off for a couple of minutes.

  2. While this is happening, boil your kettle. First add your garlic, smoked paprika, black pepper, salt, and basil to the pot and mix well. Continue to fry for two more minutes.

  3. You should now notice your tomatoes beginning to break down. Add your water and preferred milk. Mix well and leave to reduce on a high heat while we move on to prepare our sausage.

  4. Oil a large pan (needs to be large enough for the sauce and pasta), and cut each sausage up into 6 equal parts. Fry until golden brown. If the pan is hot it should take 3-4 minutes.

  5. Now add the sauce to the pan and mix well. Add the pasta and cheese, mix, and leave to steam for 11 minutes.
