Creamy kale and broccoli green pea pasta

Another dish that can be thrown together in less than 30 minutes for folks trying to pack in a healthy meal who are short on time. For anyone on a non-animal protein diet, green pea pasta is a good way to get in some protein, and with the addition of kale, broccoli, peppers, and garlic; you’re all covered for a good immune system boost and overall health maintenance.

Serves 2

Prep 10 minutes | Cook time 18 minutes

What you’ll need

1/2 red onion

3 crushed garlic cloves

1 red pepper

75g chopped kale

400ml hot water

200ml oat milk

50g grated vegan cheese

1/2 tsp black pepper

1 tsp dried basil

1 tbsp white wine vinegar

Pinch of salt

100g of green pea pasta

Method

  1. Add your red onion, garlic, red pepper, and kale to a hot pan and fry off on a high heat for a few minutes

  2. Add hot water, oat milk, vegan cheese, black pepper, basil, white wine vinegar and salt, and leave to simmer for 5 minutes until the sauce has thickened

  3. Add green pea pasta and cover for 7 minutes
