Creamy salmon and red lentil pasta

If you’ve come from my Instagram page, you know exactly why I love this dish. It’s quick to make, nutritious, and tasty if you enjoy salmon as much as I do. 

Serves 2

Prep time 10 minutes | Cook time 25 minutes

What you’ll need:

½ chopped red onion

150g halved plum tomatoes

3 tsp Cajun spice

2 tbsp white wine vinegar

2 salmon fillets

400ml hot water

200ml oat milk

1 heaped tbsp cream cheese

Juice from ½ a lemon

150g red lentil pasta

Method:

1.       Add your onion, tomatoes, and Cajun spice to a hot pan lightly oiled, and fry on a high heat for around 5 minutes, stirring regularly to spread the flavour easily and prevent burning

2.       Now add your salmon fillets skin side down, and missing the salmon, add vinegar, hot water, oat milk, and cream cheese

3.       Leave this to cook on a high heat for 8 minutes before adding your pasta and fresh lemon juice

4. Cover and maintain high heat. Leave to cook for another 10 minutes
