Teriyaki beef with honey and garlic vegetable rice noodles

Serves 2

15 minute prep time, 90 minute cook time

What you’ll need

340g lean beef sliced

Half a brown onion chopped

1 whole red chilli chopped

40g ginger chopped

3 tbsp teriyaki coconut aminos

1 tbsp sriracha

30g beansprouts

160g mixed veg (I used a tenderstem bag from Tesco of broccoli, carrots, corn, and fine beans)

Juice from half a whole lemon

1 red bell pepper chopped

100 rice noodles

850ml hot water

1 tbsp honey

2 cloves of garlic

Optional – spring onion

Optional – sesame seeds

 

Method

1.       Preheat a deep pan with oil. I used 1 tbsp of avocado oil on the middle-sized burner

2.       Add your onion, chilli, and ginger and fry on a high heat for a couple of minutes. Then add your beef strips and fry until browned. Stir regularly

3.       Add 750ml of boiled water, sriracha, Juice from half a lemon, and aminos, stir, turn the heat down and cover for 90 minutes

4.       At the 75 minute mark for the beef, preheat another pan and add 1 tsp of oil. Throw in all of your vegetables, honey, juice from the other lemon half, 100ml of hot water, rice noodles, and garlic, and fry on a high heat for a couple of minutes. Stir, turn the heat down, and cover for 10 minutes

5. Serve and enjoy
