***Egg free*** Turkey meatballs with lemon and coriander rice (served with mint yoghurt)

What you’ll need

350g turkey mince

½ tsp cayenne pepper

1 tsp smoked paprika

1 tsp garlic powder

½ tsp coarse black pepper

½ tsp ginger powder

1 tsp basil

1 tsp cumin

1 tsp turmeric

¼ red onion finely chopped

Pinch of salt

Method

1.       Preheat your oven to 170

2.       Combine in a bowl your turkey mince with all of your spices and give it a good mix

3.       Add 1 tbsp of oil to a hot pan, wait until the oil is heated, and fry each meatball until sealed and browned on each side

4.       Transfer to an oven tray and bake for 10 minutes

Turkey is a leaner option for meat eaters, but it comes with a distinct flavour so I seasoned it with Moroccan inspired spices this time. A quick and easy egg and gluten free recipe that’s low in fat, and high in protein, B vitamins, and flavour.

For the lemon and coriander rice combine 1.5 cups of brown rice, 3 cups of water, zest and juice from a whole lemon, and a pinch of fresh coriander leaves. If you’re cooking without a rice cooker, in a pot combine the same ingredients, with 5 cups of water for 45 minutes.
